Description

The Dean 106-2994 Blower Assembly works by forcing air into the cooking chamber, and evenly over the split pot by rotating it left-handedly with an 115V motor at 50/60Hz. This airflow circulates heat and maintains a consistent temperature, which the cooking appliance must accommodate. It is mounted on the left side, the unit's internal components will line up with the existing ducting. The electrical connection means that it can easily be installed and operated in the normal commercial kitchen setups.
