The Dean 2557 Fryer Thermostat 36" Capillary 200-400°F 3/8" x 3-1/2" TC125 operates by sensing and controlling the oil temperature in the fryer to keep the cooking range on the desired level. It operates using a temperature sensing bulb and a capillary tube with fluid which expands or contracts based on the change in heat, to trigger the control system to make the heating element respond. This thermostat is normally mounted in the control housing of the fryer and the sensing bulb is mounted in direct contact with the oil to detect the temperature accurately and maintain the same amount of heat throughout the cooking process.
