The Keating 35575 Control Thermostat IFM18/IFM20 Fryer works by detecting the temperature of the frying oil and signaling the heating system to either increase or decrease heat to the desired level. It operates by using a capillary tube and sensing bulb that measures temperature variations and alters the internal control mechanism in response to the temperature variations during operation. This thermostat will be installed in the control area of the fryer and the sensing bulb will be installed in the fry pot so that it can directly observe the temperature of the oil during cooking operation.
