The Hobart 916618 Dough Hook 30/40 QT Legacy ED works by spinning the dense mixtures to mix ingredients and form a uniform dough texture. The spiral form of it transfers the batch effectively and enables it to create gluten structures. This part attaches to the mixer with a standard attachment system of the 30 and 40-quart Legacy mixers, fitting smoothly into the standard attachment system.
