The Accutemp AT2A-2916-1 High Limit Over Temperature Assembly is used to measure the temperature in heating systems and to cut power off when the system overheats. It works based on a temperature-sensitive switch that will cut the circuit when it reaches the desired heat and re-cut when the system returns to its normal condition. This assembly is designed to be built into commercial kitchen appliances and is normally mounted in close to the main heating component in order to directly measure the change of temperature.
