Description

The Blodgett 61391 Combi Oven Heat Exchanger 2.06" BCM-62 directs the thermal energy generated by the combustion process into the oven airflow system to be used in controlling the temperature. The exchanger surfaces are exposed to heat and in this way hot gases can heat circulating air without making physical contact. The heat exchanger is mounted in the heating chamber of the oven, between the burner assembly. This positioning provides the ability to spread the heat all over the cooking space with separation of the combustion gases and the inner air flow.
