The Blodgett 16393 Convection Oven Knob Black OFF-500-200°F is a manual interface, which means that the operator can choose certain temperature settings by turning the dial to the required thermal marker. Internal mechanical parts convert this rotational motion into a signal to the thermostat, which in turn controls the amount of heat produced in the cooking chamber. This part fits directly on the front operating panel and fits over the D-shaped heating shaft.
