The Pitco 60159801-C Thermostat Knob 2-1/4" DIA OFF-550°F -200°F adjusts the temperature to match the desired amount of heat on the control panel. It operates by interacting with the thermostat shaft which in turn controls the output of the burner or heating element based on the desired temperature. This knob is located on the front control surface of the fryer where it is directly accessible and is linked to the main thermostat assembly to enable it to fine-tune the temperature when it is in operation.
