The Alto-Shaam GS-23778 Low Wing Door Gasket 750S operates in such a way that it creates a controlled seal that restricts the flow of air when the oven door is shut. It operates on a shaped material that fits to the door frame as pressure is applied to ensure that there is always consistent contact throughout the process. This gasket is installed around the edge of the specified door channel and is inserted into the mounting groove and fits to the door assembly to facilitate the appropriate enclosure operation.
