The Market Forge 97-5566 Draw-Off Valve Handle works by giving better control of the flow of the liquid in the kettle by using the 1/2 inch and 2 inch valve system. It works by rotating the handle to either open or close the valve to control the discharge used during cooking or processing. This handle is a stainless steel handle mounted on the draw-off assembly of the kettle usually at the lower front part of the kettle where it is easily used to release the liquid during food preparation or cleaning processes.
