The Pitco 60070701 Fryer High Limit Thermostat Manual Reset works by sensing the inside temperature of the fryer and breaking the electrical connection when the temperature goes beyond a predetermined limit. After the temperature is lowered to a safe level, it can be manually adjusted to start normal operation which is safe and consistent heating control. This thermostat is installed in the control system of the fryer, and it is usually placed close to the heating units where it is able to effectively monitor the changes in temperature and give the fryer better thermal control.
