The Star Mfg 2R-Z1299 Fryer Thermostat Knob is used to control the temperature of the commercial settings by simply turning the control dial to the preferred heat level, which makes the thermostat maintain the same cooking temperature. It is directly linked to the temperature control unit of the fryer, and one can adjust the amount of oil heat to fry different foods. The knob is designed to be installed by simply fitting the control shaft of the fryer, and it is placed on the front panel where it can be easily accessed when the fryer is in operation.
