The Market Forge 916492 Latch is a complete door part that works for the purpose of securing the door of the system in a closed position while in operation. It works with the strike to keep the door closed tight so that an airtight cooking chamber is maintained, which is necessary for proper retention of steam and temperature control. This latch is compatible with standard commercial steam equipment of type ST3E and ST10 models. It locks mechanically when the door is closed and unlocks automatically when the handle is operated.
