The Southbend 1179100 Convection Oven Puller Disk works by uniformly spreading the heat and allowing air to circulate in the cooking cavity which assists in keeping the cooking conditions consistently constant. It works by letting hot air circulate the food so that it can brown and cook evenly. The disk which is meant to be installed in commercial convection ovens, fits securely on the floor of the oven, and it is positioned in a manner that it works effectively with the racks and trays and complements the movement of hot air.
