The Star Mfg SG3-624329 Electric Griddle Knob Assembly is a part that is used to control the internal component settings by interlocking with a flatted valve stem. The mechanical torque is directly passed on to the underlying thermostat or gas valve to change the operational state of the appliance as the handle is turned. This hardware is mounted on the front-facing control manifold and sticks out of the panel so that it can be easily accessed by the user. It is built using a thermal-insulating polymer to ensure a cool surface temperature, and the faceplate has built-in graduations.
