The Vulcan Hart 00-836950 Disc & Stem Assembly 2" Draw-Off Valve works by regulating the opening and closing mechanism that controls the flow of liquid out of the kettle. This assembly is placed inside the draw-off valve so that the steam kettle can spout contents through the 2-inch outlet without any trouble. The disc and stem assembly is designed as a direct replacement part and is designed to fit into the existing valve system to provide proper liquid flow control during commercial operation.
