The Globe U03051220008 Fryer Thermostat regulates the temperature of oil by detecting the amount of heat and turning off or on the electric circuit to the heating coil at 240V. It switches power on and off to sustain the desired temperature to cook. The thermostat is intended to be used in commercial fryers in which it would be installed directly into the control panel to control heating and be integrated into the existing temperature control system of the appliance.
