The Southbend 1182553 Snap Action Thermostat operates by adjusting the amount of gas flowing to the griddle burner, opening and closing its internal contacts, to keep the set heat level. It reacts fast to changes in the surface temperature, and the conditions on the griddle plate are constant. The sensing bulb is protruding in the heated area, and the capillary tube leads back to the control system, so it is able to control the temperature correctly. It measures 3/8 inches in diameter, 5 inches in length, and has a 30-inch capillary that can be directly integrated into compatible units as a component of the temperature regulation system.
