The Star Mfg 2T-Z7268 Thermostat 200°F-375°F operates by controlling the temperature of the oil in the fryer to ensure that the temperature remains the same throughout the cooking process. It detects temperature variations inside the fryer and turns on, or off the heating component, to reach the required range of 200°F-375°F. This thermostat is normally mounted in the control assembly of the fryer, and this is linked to the heating system, and temperature probe to ensure accurate thermal control.
