The Market Forge 97-5362 Steam Valve W/Knob works by letting the steam flow into and out of the steam machine under controlled opening and closing when the knob is turned. It controls movement of steam by moving an internal stem that lines up or closes inlet and outlet ports. The valve is placed on a supply line of steam, but it is located close to the point-steam entry of the appliance, to ensure easy access of the knob as a manual adjustment. Such an arrangement makes the valve stay in line with the plumbing of the system.
