The Vulcan Hart VH810069 Black Dial Plate 3-1/4" DIA, 100-450F operates by showing a fixed scale of temperature, which translates into the rotation of a control shaft attached to it during adjustment. Rotating the shaft causes the printed markings to be used to point at values along the range, which can then be viewed in the current setting to get the current setting. This dial plate fits on the front control panel of a compatible cooking equipment with the shaft of temperature control passing over its middle.
