The Bakers Pride R3019X Char Broiler Air Mixer Plate provides a circulation of air over the entire cooking surface, which provides a uniform conditions in which heat can be distributed. It is mounted directly under the broiler grates enabling the flames to react with the airflow without causing flare-ups. The plate which is intended to be installed in a normal commercial char broiler, has a flat surface and fits into the space in the unit, with no need to change the overall arrangement. Its design allows the free flow of air and heat, and the surface temperature is evenly distributed.
