The Frymaster FM8071692 Thermostat TC125 5/16" X 5" 24" Capillary controls the temperature of oil by detecting heat with its probe and switching electrical power to the heating elements. It holds constant temperatures by switching the circuit on or off, when the oil attains the required temperature of 200°F to 375°F. This thermostat is placed in the fryer housing, and the probe is placed in the cooking oil, and the capillary tube is directed to the control area. It is attached to the electrical system to control the heating process to make sure that the oil does not exceed the temperature.
