The Star Mfg 2E-Z21557 Infinite Switch 120V/15A regulates the flow of power to electric cooking elements by varying the voltage provided so that the amount of heat can be continuously varied. It works based on a rotating system that gradually increases or decreases the current as the knob is rotated, providing a control of cooking temperatures. It has a 120V/15A rating and can be used in standard commercial appliances and it can be connected to the wiring of the appliance to control energy flow to the burners.
