The GILES 23701 Thermostat 60-250°F 208-240V operates by sensing and regulating the temperature in the cooking or heating cabinet to keep the required amount of heat. It operates with a temperature sensing probe and internal switch mechanism which closes or opens the electrical circuit depending on the changes in temperature. This thermostat is fitted in the control system of the appliance and linked to the heating component and power supply, where it controls the temperature cycles to provide the same and accurate heat control.
