The Southbend 2662A8723 Thermostat S 3/16" X 11-5/8" 48" CAP operates by detecting the temperature changes in the equipment and adjusting the heating element as necessary to keep the temperature at the desired level. It operates using its temperature-sensing bulb and capillary tube that sends the pressure changes to the electrical contacts so that the temperature can be adjusted accurately. This thermostat is commonly placed in cooking or heating appliances and linked to the control system so that there is constant thermal regulation when it is in use.
