The Ultrafryer 19A193 High-Limit Safety Thermostat LCH Nickel Plated operates through a temperature-sensing bulb that expands and contracts in response to changing heat conditions transmitting those changes through a capillary tube to the system control. This action enables the system to monitor operating temperatures and react when the preset 450°F limit is reached causing the electrical circuit associated with the heating system to open. Installed in compatible commercial frying equipment this unit uses its 1/4" x 4-7/8" sensing bulb and 30" capillary assembly to detect temperatures within the heated section of the appliance and manage over-temperature shutdown conditions.
