The Star Mfg 2J-6403 Infinite Switch 240V 15A operates by controlling the amount of electrical current that flows to a heating element to enable the temperature to be set at different levels. It operates by using an internal cam and contact system which switches power on and off at different intervals to sustain the desired amount of heat. This infinite switch is mounted in the control panel of the equipment and it is linked between the source of power and the heating component, where it allows for adjusting the cooking or warming temperatures accurately during the operation.
