The Pitco B6718701-C Temperature Probe Retrofit Fit Kit measures the temperature of oil by transmitting electrical signals through the probe to the control system of the fryer to enable the unit to adjust heating components based on the temperature of the oil. The kit consists of parts that are required to change or upgrade the current probe, which would provide the correct electrical connection and transmission of the signal. It can be installed in the fryer with the probe tightly seated in the oil chamber and the wiring and mounting hardware are installed into the control system of the appliance.
