The Star Mfg 2T-Z6007 Thermostat Control 200°F to 375°F regulates the amount of heat in the fryer by measuring the temperature inside the fryer and turning the heating element on or off to maintain the desired temperature. It operates with its 36-inch capillary tube and 3/8-inch bulb that measures the temperature of the oil and turns on the control mechanism when necessary. This element is installed into the internal control system of the fryer, and it is designed in such a way that the bulb is in direct contact with the oil to respond to thermal changes.
