The Dean 806-0714 Fryer High-Limit/Safety Thermostat Kit operates by sensing the oil temperature and opening the electrical circuit when it reaches the fixed 425°F limit, stopping power to the heating system. Its 2-1/4" sensing bulb continuously monitors heat levels, while the 1/2" MPT threaded connection locks the thermostat within the fryer for proper operation. It is installed in the fryer’s temperature control assembly, where it interacts with the heating and control system to monitor operating conditions during cooking. Proper fit and connection maintain the intended operation of the temperature safety system.
