The Dean 807-0095 High-Limit/Safety Thermostat Kit monitors fryer oil temperature and interrupts the heating circuit when the temperature reaches 425°F, supporting the prevention of overheating during operation. Its 2-1/4-inch bulb detects heat within the fryer, while the 1/2-inch MPT connection allows secure installation into the temperature-sensing position. The high-limit kit is mounted in the fryer's temperature control assembly, where it works alongside other heating system parts to regulate high-limit protection.
