The Dean 807-2274 Fryer High-Limit/Safety Thermostat Kit monitors oil temperature and opens the electrical circuit when the temperature reaches 425°F, stopping the heating process to prevent excessive heat buildup. Its 2-1/4-inch sensing bulb detects temperature changes inside the fryer, while the 1/2-inch MPT connection secures the thermostat within the system. This kit is installed in the fryer's temperature control assembly, where it operates with the heating circuit to regulate high-limit operation. It includes the thermostat and related installation parts required for compatible commercial fryers, supporting normal temperature control during cooking operations.
