The Dean 826-1177 High-Limit/Safety Thermostat Kit operates by sensing the fryer oil temperature and opening the electrical circuit when the preset limit is reached stopping the heating process. It continuously monitors temperature changes through its sensing element to support high-limit operation during cooking. The high part is installed in the fryer's temperature control assembly, where it operates with the heating system and safety controls. The 2-1/4-inch bulb, 425°F temperature rating, and 1/2-inch MPT connection match the specified mounting and sensing requirements. It includes the thermostat and related installation parts for compatible commercial fryer applications.
