The Dean 826-2454 High-Limit/Safety Thermostat Kit operates by sensing fryer oil temperature and interrupting the heating circuit when the preset limit is reached to stop additional heating. With a 2-1/4-inch sensing bulb, 425°F temperature rating, and 1/2-inch MPT connection, it is designed to detect heat changes and fit the designated mounting position within the appliance. It is installed in the temperature control assembly, where it operates with the heating system and safety controls. It includes the thermostat and related installation parts required for compatible commercial fryer applications while supporting cooking operation.
