The Cleveland SE50018 Direct Steam Kettle Knob regulates the amount of steam passing through the 3" draw-off valve and the liquid can be gradually released. It works by rotating the knob to either open or close the valve to control the contents of the kettle when cooking. It is installed on compatible stainless steel TD-3 kettles and is attached to the valve stem, allowing easy access and control and not interfering with the current hardware. This part makes the valve mechanism work in a smooth manner as part of the steam working system of the entire kettle.
