The Groen 012061 Handwheel Assembly is used to transfer manual rotation into mechanical movement to control the tilting action of a braising pan. It is linked to the tilting mechanism, enabling the user to smoothly tilt the pan up and down during cooking and component transfer. This assembly is usually mounted on the outside of compatible braising pans, close to the tilt control shaft and is the primary hand-operated part of the pan assembly to adjust pan position. It is intended to allow for multiple movements while preparing, emptying and cleaning foods in commercial kitchen settings.
