The Jade Range 119-135-141 Open Top Burner Assembly 21.25" CI works by distributing the gas evenly over its cast iron surface, and then it ignites to create a steady flame to cook with. The temperature is regulated by using turnable knobs, which can be used to produce a low or high flame depending on the cooking requirement. The burner assembly is designed to be placed in the top part of the commercial kitchen range and will fit the gas supply and existing gas controls to fit into the cooking components.
