The Duke 153471 Food Warmer High Limit Thermostat is a thermostat that will check the temperature and shut off power to the heating component once it reaches a preset limit to avoid overheating. With an increase in temperature, thermostat closes the circuit when the limit is attained, to prevent power flow and be safe. This high-limit thermostat is attached to the heating component in the machine, and is installed in a place that will detect the highest operating temperatures. This does not overheat the appliance and the conditions around it.
