The Keating 21081 RX Thermostat operates by sensing the temperature within the unit and regulating power to the heating system to maintain the selected cooking temperature. Its internal sensing element responds to heat changes cycling the heating components on or off as needed within the 245°F to 400°F operating range. This is installed in the temperature control system with the 5/16-inch by 8-inch sensing bulb positioned in the heated area to monitor oil temperature. It operates as a control component that supports managing the system heating cycle during operation.
