The APW Wyott 55608 Bottom Cover 10-1/2" x 17" pan, 1-3/4" height, 10-1/2" center-to-center acts as a shield and thermal conductor under the pan and this allows the even distribution of heat and avoids direct contact with the heating system. The cover is mounted at the bottom of the pan assembly and it provides uniform cooking results.
