The Blodgett 60323 Air Temperature Probe is used to measure temperatures of internal cavities to 350°C in order to regulate the appropriate amount of heat in commercial baking equipment. It is located in the airflow of the oven and sends temperature readings to the control module to enable the system to control heating elements accordingly. It is used in daily operations to ensure that the cooking conditions of diverse food-service operations remain predictable. The probe construction allows the correct sitting of the sensor port of the unit and hence it can be used in the standard replacement, performance check, and service-based calibration processes.
