Southbend B940000201 Thermostat is a capillary-style temperature controller that is used to monitor and control heat in commercial cooking equipment. It works by detecting temperature variations using a 3/16-inch by 12-inch bulb which provides information to the control to either open or close the heating circuit when necessary. The sensing bulb is fitted in the heated space with the 36-inch capillary and stem connecting it to the control mechanism. This thermostat is a primary control element in ovens, ranges, and griddles, which assists in maintaining uniform operating temperatures and in providing appropriate system operation in the normal operation.
