The Blodgett BL4606 Thermostat Kit controls the temperatures inside the pan by detecting the amount of heat inside it by expanding and contracting a fluid-filled bulb against a sensitive internal diaphragm. This mechanical action opens or closes the electrical contacts to turn on the heating elements or gas valves and keep the desired thermal setpoint. The positioning is in the control compartment of the appliance and the sensing bulb sticks out into the baking chamber to provide accurate outside input.
