The Blodgett BL93 Oven Center Deflector Panel Assembly 20" W x 30-1/2" L operates on the concept that velocity air is picked up by the blower wheel and directed to the unit to control the internal airflow pattern. This element is used to bend the stream of heat to the outer part of the baking unit to prevent hot spots on the food item. The assembly is installed in the middle of the internal cavity, between the fan element and the rack system, to operate as a key thermal barrier.
