The Vollrath/Idea-Medalie 15112 Scalloped Blade Assembly 7/32" works by moving food product through its scalloped cutting edges to create uniform slices when using the equipment. It operates because the product is forced through the blade surface and each movement forms regular cuts based on the predetermined distance between the assembly.
