The Hobart E-290339 Grinder Knife and Plates 10/12 work by shearing and forcing the part through the aligned sides of its holes as the auger of the grinder rotates, producing pieces of the product of a uniform size. The rotational motion drives the material through the holes on the plate, with the knife cutting the plate that controls the texture during processing. They are deposited at the end of feed screw of the grinding head and are used in compatible commercial meat grinders.
