The Alto-Shaam GS-22952 Door Gasket 19-1/2" x 28" is a close fitting strip that fit around the opening between the door and the oven cavity to ensure that the internal temperature does not vary throughout the use of the oven. It is applied in commercial kitchen ovens to reduce heat loss and provide appropriate cooking conditions. The gasket is installed tightly in the door frame which ensures an equal distribution of heat and effective work during the cooking cycle.
