The Henny Penny 77285 Open Fryer High Limit Thermostat 425°F/218°C provides protective operation by sensing the oil temperature and stopping power if too much heat is present. It works by using a temperature-sensing element that senses the temperature rise, and will open the electrical circuit when the set temperature is reached, thereby preventing further heating until the system is reset. It is placed in the fryer tank assembly and is in direct contact with the oil zone to control the extreme temperature during cooking cycles.
