The Imperial IMP1091 Convection Oven Cook and Hold Controller works by accepting the input of a temperature sensor and user settings and interpreting the inputs based on its internal circuitry to determine, when to turn on or turn off heating elements and control outputs. The controller sends electrical signals that adjust cooking temperature and go to hold mode depending on programmed profiles as it reads data. It is mounted in the control panel of the compatible cook-and-hold ovens or cabinets and the wiring harness and user interface are connected.
